Crafted by Fukugen Shuzo, nestled in the Azumino valley of the Shinshu region in Nagano Prefecture, this Nigori Sake embodies the essence of its surroundings. With roots dating back over 260 years, Fukugen is a venerable sake brewery situated beneath the breathtaking Northern Japanese Alps, where it sources natural spring water for its brewing process.

The name "Fukugen" derives from the phrase “Ippuku Shomanfuku,” symbolizing the belief that a single scoop of sake brings forth various forms of good fortune.

Established in 1758, Fukugen Shuzo continues its legacy under the guidance of Seiko Hirabayashi, the 18th generation head of the family and current President.

Fukugen Shuzo initially focused on cultivating Yamada Nishiki sake rice in its own rice fields in Azumino, Nagano Prefecture, during the 1980s, guided by the brewery's direction (the 17th KURAMOTO). However, Yamada Nishiki cultivation in cold regions posed challenges. After years of observing its robust growth and adaptation to the harsh local climate in the terraced rice fields of Otari Village, located in the northernmost part of Nagano Prefecture, we transitioned it to our own fields in Azumino, slightly further south.

Since the outset, this brewery has embraced the principles of "lutte raisonnée," a form of reduced pesticide organic cultivation. We prioritize environmental protection by minimizing the impact of pesticides on the soil, thus fostering the natural blessings of our surroundings. Fukugen's commitment extends to sake brewing that respects people, society, and the environment. As a result, our process is streamlined and our brewing volume aligns with the harvested rice.

Nektar Nigori is meticulously crafted by filtering the moromi through a cloth, resulting in a luscious, creamy texture that is both rich and smooth. Its velvety consistency pairs beautifully with grilled salmon and pork dishes, as well as with desserts.

This particular Nektar Nigori Genshu has been aged for a minimum of two years in bottles, enhancing its depth and complexity.

Fukugen Kura-do

While numerous sake breweries employ brewers year-round, Fukugen boldly opts for individuals (Kurabito) who work at the brewery solely during the winter months, dedicating the rest of the year to agriculture in spring, summer, and fall. In essence, Fukugen places its production in the hands of masters skilled in both agricultural practices and sake brewing techniques. This approach stems from Fukugen's belief that possessing comprehensive knowledge of the land's nature is a crucial element essential to their sake brewing process. Fukugen asserts that the distinct flavor and taste of their sake are attributed to the expertise of their local Kurabito.
