This junmai daiginjo sake is crafted with a terroir-based concept, using 100% of the “Kairyō Shinkō” rice variety, which is cultivated in the company's own rice fields and by contracted farmers in Agatsuma District, Gunma Prefecture. The rice is polished down to a 45% milling rate, resulting in a refined sweetness and a fresh taste, brought out by the slow fermentation at low temperatures. Additionally, the sake uses a unique rose yeast derived from the “Princess Michiko” rose, named after Empress Emerita Michiko.
The Princess Michiko Rose yeast produces a distinctive sake with delicate aromas, often featuring notes of roses, lychee, and other floral/fruity essences. It's sought after by brewers looking to craft elegant and aromatic sakes.
