This junmai daiginjo sake is crafted with a terroir-based concept, using 100% of the “Kairyō Shinkō” rice variety, which is cultivated in the company's own rice fields and by contracted farmers in Agatsuma District, Gunma Prefecture. The rice is polished down to a 45% milling rate, resulting in a refined sweetness and a fresh taste, brought out by the slow fermentation at low temperatures. Additionally, the sake uses a unique rose yeast derived from the “Princess Michiko” rose, named after Empress Emerita Michiko.

The Princess Michiko Rose yeast produces a distinctive sake with delicate aromas, often featuring notes of roses, lychee, and other floral/fruity essences. It's sought after by brewers looking to craft elegant and aromatic sakes.

Key achievements and certifications include:
- Awarded the **Recommended Sake Prize** in the Junmai Daiginjo category at the **IWC 2020 SAKE competition**.
- Won the **Excellence Award** in the Junmai Ginjo category at the **91st Kanto-Shinetsu Regional Taxation Bureau's Liquor Appraisal** (November 2020).
- Certified *vegan*.
- Tasting review from *Sarah Abbott*, a Master of Wine and head of the Swirl Wine Group (March 2020):
   - "A refreshingly sweet character with attractive aromas of banana and green melon, and a hint of creamy scent. While elegant, the flavor is rich, featuring a balanced warmth from the alcohol and a velvety yet fresh finish."

This sake is a highly refined product, known for its meticulous use of rice, yeast, and fermentation techniques, and has received multiple awards and international recognition.
