Genshu - 原酒

Undiluted sake produced without adding water after fermentation, resulting in a higher alcohol content of around 18-20%.

Normally, most sakes are diluted to 15-16% ABV to create a balanced alcohol level, but genshu skips this dilution step, leading to a more concentrated flavour and richer body.

Sake which is both unpasteurized and undiluted is often called namagenshu ( 生原酒).
