Junmai - 純米

This sake has no added distilled alcohol and is therefore called 'Pure Rice'.

The rice is usually polished to 70% or less. 

Junmai Ginjo - 純米吟醸

This sake must use rice polished to at least 60%.

Junmai Daiginjo - 純米大吟醸

Polished to at least 50%.

Tokubetsu Junmai - 特別純米

"Tokubetsu" means "special," and refers to special production features, such as a low polishing ratio or a unique brewing method.
