Founded in 1841, Hijiri brewery uses pristine local spring water and only contract-grown rice. The Kanto no Hana brand honors the stunning Maebashi Castle, which the Shogun gifted to the warriors of Gunma. All Kanto no Hana sakes start with Hitomebore rice polished to 35%, with different polish rates and yeasts used to create diverse styles. In contrast, the Hijirizm brand bypasses traditional polishing classifications, offering a distinct approach to sake crafting.
