Founded in 1897, Kawanishiya Shuzō has been brewing sake for over a century in Yamakita, Kanagawa Prefecture. Nestled at the foot of the Tanzawa mountains, the area is blessed with abundant pure spring water and a cool climate—ideal conditions for sake brewing.

The brewery is renowned for its skillful use of the Yamahai brewing method, which produces sake with depth, complexity, and a rich acidity that pairs beautifully with food.
