Shidaizumi Sake Brewery is nestled along the banks of the Seto River, about 20 kilometers west of Shizuoka City. It was founded in 1882 by Kyusaku Mochizuki, who chose this location for one important reason: water. The Seto River provides exceptionally pure, soft water—ideal for sake brewing. Soft water supports a slow fermentation process at lower temperatures, which is key to producing sake with a clean, smooth taste—clear and refreshing, like snowmelt from a high mountain stream.

The Toji at Shidaizumi applies generations of craftsmanship to bring out the perfect balance between rice and water. In every bottle, one can taste the gentle sweetness of rice—an essential essence of sake—refined into a flavor that is both nuanced and inviting.
