DASSAI made from 8%–polished Yamada Nishiki tōgai (non–premium grade) rice.
Because it’s tōgai—rice that doesn’t qualify for premium grades—we polished it to the absolute limit. Even the most skilled growers produce about 10% tōgai, which cannot be used for premium sake, creating a financial burden for farmers. This sake is our way of addressing that issue.

Despite the extreme polishing that typically suggests a clear and delicate profile, this sake surprises you with a bold, distinctive character.
