A sake with a well-balanced fruity aroma and a rounded flavor
This sake is a symbolic product of Hakutsuru, crafted from the heritage of traditional techniques and passion. It boasts an aromatic, delicate, and deep flavor profile. Made with "Hakutsuru Nishiki," a sake rice variety closely related to Yamada Nishiki, the grains are meticulously polished and fermented slowly at low temperatures over a long period.
Through a process of low-temperature bag hanging, the fruity aromas of apple and pear are fully drawn out, alongside the delicate and rounded flavors that "Hakutsuru Nishiki" offers.
Each stage of production, from "hand washing (rice washing)" and "limited water absorption (soaking)" to the traditional futakouji (lid method for koji making), is done by hand. The sake is crafted exclusively from natural drip sake (shizuku-shu) collected without applying pressure.
This Junmai Daiginjo is a masterpiece offered in a limited quantity, each bottle featuring a serial number.
