Item Description: Niizawa Brewery, known for major brands like Atago No Matsu and Hakurakusei, introduced 'Zankyo' (meaning 'Reverb' or 'Vibration') to push sake brewing boundaries. Spending 350 hours polishing their own rice, they were the first to achieve a remarkable 7% rice polishing ratio.

Zankyo Super 7 was born from Niizawa-san and his team's challenge to push rice polishing to the limit and create an incredibly refined sake. Traditionally, achieving the highest qualification of Junmai Daiginjo/Daiginjo requires polishing away 50% of the rice, but some producers, including Niizawa, have experimented with higher rates. After 350 hours of polishing, they reached an unprecedented 7% polishing ratio. This sake, aptly named Zankyo ("Reverb" or "Vibration"), boasts an exquisitely light and delicate structure, with fleeting textures, flavors, and aromas that define the finest sakes—always just beyond reach.
