History

  • Originally established in 1875 in Shintomicho, Kawagoe City, as Kagamiyama Shuzo Co., Ltd.
  • Re-established in February 2007 in Nakacho, Kawagoe City.

Background:

  • Micro-Brewery with 5 employees
  • Kagamiyama Shuzo Co., Ltd., which had been beloved as a local sake brewery in Kawagoe, closed its doors in September 2000.
  • Six years later, in response to strong voices from local government and citizens, Koedo Kagamiyama Shuzo Co., Ltd. was established with the understanding and cooperation of related parties.
  • Kawagoe, known as "Little Edo," retains the atmosphere of the castle town from the Tokugawa era.
  • Koedo Kagamiyama Shuzo has embarked on a new journey since its founding in 2007, continuing the historical legacy of Kawagoe.
  • Focuses on sake brewing that utilizes local resources and stays rooted in the local community.

Revival:

  • A new sake brewery was completed on February 1, 2007.
  • Committed to uncompromising sake brewing, the brewery staff work around the clock to meticulously manage the maturation of their sake.

Certification:

  • In September 2008, recognized by the Ministry of Economy, Trade and Industry and the Ministry of Agriculture, Forestry and Fisheries for their agriculture-commerce-industry collaboration project.

Features:

  • Uses clear, abundant groundwater from the Chichibu mountain range and high-quality rice.
  • Inherits and applies traditional Nanbu brewing techniques.

Tasting Note

 "Shizukushu Sake" is captured drop-by -drop from bags suspended over an 18-liter glass "tobin" or container. Only a miniscule amount of the very best sake is collected this way. Made with “Sakemusashi,” Saitama’s local sake rice. This exquisite sake pairs beautifully with sushi and sashimi. Serve chilled. Ingredients:
