About Brewery

Fukumitsuya was founded in the 2nd year of the Kanei era (1625). It is the sake brewery with the longest history in Kanazawa. Blessed with pure brewing water that takes a hundred years to spring up into the brewery and high-quality sake rice grown under contract, we have continued to brew sake for over 400 years while inheriting traditional craftsmanship. Sake brewing, where nature plays the leading role, is brought to perfection by the skills of the brewmasters. As a junmaishu (pure rice sake) brewery, Fukumitsuya brews all of its sake using only rice and water. Revisiting our fundamentals through the lens of our long history, we will continue to stay true to rice and water in our sake brewing.
