ABOUT 

A beautiful, elegant, yet powerful sake. There are big, competition style aromas, leading to a fresh mouthfeel. The finish features clean acidity a bit of refreshing sweetness. This is a single tank, brewed at the end of the season and reserved only for her favorite restaurants. To retain freshness, it is bottled within 3 minutes of pressing and never diluted, filtered or pasteurized. 

SERVING

Chilled in a white wine glass over the course of an evening of Kappo or Omakase. 

BREWERY

Founded in 1881, near Maebashi, Gunma, Machida is one of the few breweries with a female Toji. She uses onsite well water from the Tonegawa River. Her husband is the president and they only have 3 workers, preferring to concentrate on single batch quality rather than quantity.
