2024 S.Tokyo – Modern Sake with a Rare Yeast
Brewed with a once-forgotten “phantom yeast,” S.Tokyo offers a refined new take on sake. Instead of today’s standard low-temperature method, it’s fermented traditionally at a slightly warmer 14°C, creating a style that’s smooth, approachable, and unique.
Brewed with a “phantom yeast” discovered in 1909 but never before used in sake making, it was miraculously revived by Nakazawa Shuzo’s 11th-generation brewmaster, Ryo Kagiwada. This yeast creates flavors impossible to achieve with modern mainstream strains.

About Brewery
Matsumidori Shuzo is a historic sake brewery located in Odawara, Kanagawa Prefecture. The brewery’s origins date back to 1825 (Bunsei 8), when it was granted the name “Matsumidori” by order of the Odawara Castle lord, following the lifting of sake brewing restrictions during the late Edo period. Since then, the brewery has continued its sake-making tradition for nearly 200 years, refining techniques passed down through generations. Matsumidori is deeply rooted in the local community, drawing on Odawara’s natural environment and water sources to craft sake that balances tradition with modern sensibilities.
