  • Tsuchida Shuzo presents a complex and robust sake crafted with traditional natural brewing techniques. They use a common table rice milled to only 90%, allowing the rich flavors of the rice grain to shine through. Through the bodaimoto and yamahai brewing methods, natural lactic acid develops during fermentation. Tsuchida also employs ambient yeast in the brewery, resulting in a pure sake with no additives—just rice, water, and koji.

    "Meat Lovers Only" was created in collaboration with a Tokyo chef specializing in premium beef. This sake is rich and bold, particularly enjoyable when warmed (recommended at "jokan" 113°F). When heated, it reveals flavors of nutmeg, cloves, molasses, cinnamon, caramel, and soy sauce. The pronounced umami and higher acidity of this sake pair beautifully with meat proteins, enhancing both the sake and the meat's flavors.
