This yeast was collected in 2017 by Brewmaster Toji Furuchi from a Yoshino cherry tree that was planted to commemorate Professor Takeshi Sasaki’s inauguration as President of the University of Tokyo.

Yoshino Sakura refers to cherry trees associated with Yoshino, Nara, a famous cherry blossom site in Japan

Who is Sasaki?

Takeshi Sasaki is a Japanese political scientist who served as the 27th president of the University of Tokyo. He has served as the chairman of the Japan Academy since 2022.
