Crafted by Fukumitsuya in Kanazawa, Ishikawa, Kuroobi “Dodo” Yamahai Junmai is a bold, full-bodied sake created for experienced sake drinkers who appreciate depth, structure, and acidity.
Brewed using traditional Yamahai fermentation with a proprietary yeast cultivated in-house, this junmai sake is carefully aged for two years within the brewery. The result is a powerful yet refined profile defined by vibrant acidity, sharp structure, and rich umami from the rice.

While delicious chilled or at room temperature, Kuroobi truly shines when gently warmed. From body temperature (hitohada-kan) to warm (nuru-kan), the complexity and balance deepen remarkably — a hallmark of great “kan-agari” (sake that improves with warming).
