What is "LED Yume Kobo"?
"Narutotai LED (Red)" is brewed using LED Yume Kobo, a rare yeast developed in Tokushima Prefecture. This yeast is exclusive to breweries within Tokushima and was created by continuously exposing existing yeast strains to various LED lights, resulting in a completely new type of sake production.
High Acidity & Sweetness: LED Yume Kobo 3826 Type 2
The specific yeast strain used in Narutotai LED, LED Yume Kobo 3826 Type 2, is classified as a "high-acid type," designed to produce exceptionally high acidity with a sweet finish.
Brewed using 100% "Awa Ichiba Yamada Nishiki", Tokushima's premium sake rice, and fermented with "LED Yume Kobo" yeast—this Junmai Ginjo is a true all-Tokushima creation.
