Nabeshima New Moon Nama is a highly anticipated seasonal release from the renowned sake brand Nabeshima, bottled just after pressing to capture the vibrant energy of newly brewed sake. As its name “New Moon” suggests, this sake represents a fresh beginning—pure, lively, and full of momentum.
Brewed with 100% Oyamanishiki rice from the Nanto Agricultural Cooperative in Toyama, polished to 50%, this sake highlights the rice’s elegant umami and clean structure. As an unpasteurized (Nama) and undiluted (Genshu) sake, it delivers an expressive combination of freshness, depth, and vitality.

2024 S.Tokyo – Modern Sake with a Rare Yeast
Brewed with a once-forgotten “phantom yeast,” S.Tokyo offers a refined new take on sake. Instead of today’s standard low-temperature method, it’s fermented traditionally at a slightly warmer 14°C, creating a style that’s smooth, approachable, and unique.
Brewed with a “phantom yeast” discovered in 1909 but never before used in sake making, it was miraculously revived by Nakazawa Shuzo’s 11th-generation brewmaster, Ryo Kagiwada. This yeast creates flavors impossible to achieve with modern mainstream strains.
