Watanabe returns to traditional sake brewing with W Hidaminori Junmai Muroka Genshu. This sake is brewed with Hidaminori rice and pressed using cotton bags dyed with astringent persimmons. The persimmon tannins in the fabric help to gently filter the sake, removing harsh notes while adding a refined clarity. As a result, the sake develops a smooth mouthfeel and a subtle depth of flavor. The natural tannins balance its fairly sweet, rich character, creating a well-rounded and elegant finish.
Hidaminori rice is produced in Hida Furukawa. It went extinct in 2000, but was restored in 2020.
Watanabe is the only Japanese brewery using this rice.
Non charcoal filtered, this sake is bottled at barrel strength for maximum flavor. Serve chilled.
Must be stored in a dark, refrigerated place.
