Brewed with rice, water, and people from Ōarai, this sake reflects the local climate and culture—truly a local sake among local sakes. The brand name Hikoichi comes from Sakamoto Hikoichi, who founded Tsukinokatsura Brewery in Ōarai in 1865. The name was traditionally passed down through generations of brewery owners, but it was discontinued after the early deaths of the 7th-generation owner’s grandfather and father. To carry on this legacy, the new brand Hikoichi was launched in 2014.
Since 2004, Tsukinoi Sake Brewery has been crafting Wa no Tsuki using JAS-certified organic sake rice grown in Ibaraki. Respecting the unique character of this rice throughout the brewing process, the sake has been nurtured with the vision of creating a one-of-a-kind, gentler sake for the body. This commitment has only deepened under the guidance of the 8th-generation brewer, Naohiko Sakamoto.
In 2023, Tsukinoi Sake Brewery was honored to welcome Tatsuya Ishikawa, a leading master of the traditional kimoto method, to the brewery. Thanks to this collaboration, Wa no Tsuki Junmai Daiginjo brewed in the kimoto style is now available.
For nearly a year since pressing the new sake, Tsukinoi Sake Brewery has tasted it countless times, exploring different serving temperatures, and each time was captivated by its profound complexity and expanding layers of flavor. To preserve its natural character, it is being released unblended, as genshu (undiluted sake).
