Kanto No Hana Junmai Daiginjo
Kanto No Hana Junmai Daiginjo
ABOUT
Many Junmai Daiginjo sakes share similar flavors due to using rice grown in the same region. However, Hijiri stands out by choosing only top-quality table rice for their Kanto no Hana brand. Specifically, they use Hitomebore, a highly valued eating rice grown just a mile away. The koji rice is polished down to an impressive 35%, which is the highest polish for any table rice. This process preserves a rich umami and complexity, balanced by a highly aromatic, competition-grade yeast. The result is a Prosperity sake that offers exceptional quality and flavor for its price.
SERVING
Best enjoyed chilled or slightly cool in a white wine glass. It’s excellent on its own or pairs well with light dishes like salads, white fish, and sushi.
BREWERY
Founded in 1841, Hijiri brewery uses pristine local spring water and only contract-grown rice. The Kanto no Hana brand honors the stunning Maebashi Castle, which the Shogun gifted to the warriors of Gunma. All Kanto no Hana sakes start with Hitomebore rice polished to 35%, with different polish rates and yeasts used to create diverse styles. In contrast, the Hijirizm brand bypasses traditional polishing classifications, offering a distinct approach to sake crafting.
