Founded in 1758, Fukugen Brewery is an old established sake producer, ever since the Edo period, a time when samurai rode the streets and ruled the land. The company is owned by the Hirabayashi family, and its secret method of sake brewing has been passed down from generation to generation. Currently, Seiko Hirayashi is the eighteenth of head of family, and his daughter, Seiko succeeded him.
This is a rich plum Sake is made with selected nutritious plums grown in the naturally rich Azumino at the foot of the Northern Alps in Nagano Prefecture.
This plum liqueur is exceptionally rare and crafted in a unique manner, utilizing undiluted sake from Fukugen (typically, plum liqueur is made using shochu or brandy). It is created by aging carefully selected plums grown in the fertile fields of Azumino at the base of the Northern Alps, as well as plums sourced from Yamanashi at the foot of the Southern Alps. These plums are meticulously chosen and brewed with the Genshu (undiluted sake) produced by Fukugen's master brewer, using the pristine underground water flowing from the Northern Alps and healthy sake rice from Azumino.
Undiluted sake (Genshu) has a lower alcohol content compared to shochu and brandy, which presents a challenge in plum liqueur brewing. However, it offers a smooth mouthfeel and is exceptionally easy to drink compared to other beverages. After aging for eight years, the plum liqueur contains an abundance of plum extract, combined with added honey, resulting in a flavor profile that is unmatched.
This Azumino Umeshu develops a mellow, sweet richness over its eight-year aging period, making it perfect for Sake beginners and seasoned enthusiasts alike.
