Crafted from local rice and yeast, this sake truly embodies the essence of the Nanbu Toji guild's craftsmanship. SERVING
Junmai Daiginjo is excellent when chilled and paired with sashimi or crudo. However, try letting it come to room temperature and enjoy it with soft cheeses—it’s like adding a fruit plate to your experience!
BREWERY
Established in 1917 by 175 shareholders from seven villages in the Hanaizumi region, Iwanoi was founded as a publicly-owned local company. Its mission was to prevent the illegal production of doburoku (unrefined sake) and to provide winter employment for local farmers.
Today, Iwanoi continues to thrive with 181 shareholders, primarily from Hanaizumi Town. Unlike many sake breweries, it operates as a community-owned enterprise rather than a family-run business. Iwate Prefecture, known as the birthplace of the Nanbu Toji—the largest and still highly active association of master brewers in Japan—adds to the brewery's prestige.
